LENTIL AND GREEN BEAN SALAD (Diabetic) Print E-mail
A fresh combination of green beans, cucumber, spring onions and snow peas, with a touch of chilli and coriander drizzled with ginger dressing.

Preparation Time: 10 minutes

Ingredients
400g can Edgell Brown Lentils, drained
400g baby green beans, blanched
1 Lebanese cucumber, sliced
3 spring onions, chopped
1 cup snow pea sprouts
1 red chilli, seeded and finely chopped
¼ cup fresh coriander leaves
Dressing:
2 teaspoons grated fresh ginger
1 clove garlic, crushed
2 tablespoons rice wine vinegar
2 teaspoons reduced salt soy sauce

Method
1. In a large serving bowl combine Edgell Brown Lentils, green beans, cucumber, spring onions, sprouts, chilli and coriander.
2. Combine dressing ingredients, pour over salad and toss gently to combine, serve immediately.

Tip: When available, use snake beans instead of green beans. This salad is delicious when mixed with peeled, cooked school prawns.
