Makes ¾ cup
Ingredients
1/2 cup chopped onion
1-1/2 tbs brown sugar
1 tbs vegetable oil
1/3 cup cider vinegar
1/3 cup tomato sauce
1 tbs prepared horseradish
1 tbs water
1/2 tsp. ground black pepper

Method
" Cook onion and brown sugar in a small saucepan over medium heat about 3 minutes, or until onion is tender.
" Add remaining ingredients and continue cooking over medium heat 3-4 minutes, stirring occasionally.
" Remove from heat and cool thoroughly before adding to meat or poultry.
" Place marinate in the refrigerator. Allow about 1/2 cup marinade for each 500g to 1kg of meat.
" Turn meat occasionally during marinating so that all sides are equally exposed to the marinade.
" For flavour only, marinate 15 minutes or as long as 2 hours. For tenderising, allow at least 6 hours.
" Remaining marinade may be brushed on the meat during grilling, or used as a sauce, provided it is brought to a rolling boil for at least one minute prior to serving.
