Serves 2

 

300g seafood of your choice (i used prawns, scallops and calamari)
3 Tbsps Red Curry Paste
400g tin coconut milk
1-2 tbsp fish sauce
Vegies of your choice (I used onion, green beens and red capsicum)

Brown onion in a pan and add curry paste. Stir for a few minutes until hot. Add seafood and cook for about 1 minute. Add coconut milk and bring to boil.  Add fish sauce and vegies and cook for another minute or so until seafood is cooked.

Serve on fragrant rice.

Subsitute seafood for any meat you like - you'll just have to cook it for a bit longer before adding the coconut milk.
