Ingredients:
11/2 lb/680 g lamb neck fillet,
cut into 1 in/21/2 cm pieces
fresh mint to garnish
lemon wedges to serve


Marinade
31/2 oz/100 g strained plain yogurt
1/2 small onion, grated
2 cloves garlic, crushed
juice of 1/2 lemon
1 tbsp olive oil
3 tbsp chopped fresh mint
salt and black pepper


Method:
1. To make the marinade, mix together the yogurt, onion, garlic, lemon juice, oil, mint, and seasoning in a large non-metallic bowl. Add the lamb and stir to coat. Cover with Glad Wrap and refrigerate for 4 hours or overnight.

2. Thread the lamb onto 4 or 8 metal skewers, depending on the size of the skewers cook in an electric fry pan for 1012 minutes, turning the skewers 23 times, until cooked through. Garnish with mint and serve with lemon wedges.
