CARDAMOM & PISTACHIO ICE CREAM LOG Print E-mail

Frozen ice cream logs are very popular for the Australian climate at Christmas time.

Preparation Time: 10 minutes
Makes 12 slices

Ingredients
½ cup cream
1/8 teaspoon ground cardamom
2 teaspoons grated orange rind
1 litre vanilla ice cream, softened
2 tablespoons Grand Marnier liqueur
1 cup roasted pistachios, shelled
Honey, to drizzle

Method
1. In a small saucepan place cream, cardamom and orange rind. Heat over a low heat for 1  2 minutes or until cream starts to steam. Do not allow to simmer or boil. Pour into a glass bowl and place in the freezer for approximately 1 hour to cool.

2. Once cooled remove from freezer and semi whip.

3. Place softened ice cream, Grand Marnier and pistachios in a large bowl and gently fold until combined. Fold through the cream mixture. Pour into a plastic wrap lined 19cm x 9cm loaf pan, smooth top, cover with plastic wrap and allow to freeze over night.

4. When serving cut into 1.5 cm slices and drizzle with a touch of honey.


FREEZING TIME: minimum 4 hours

TIP: As an alternative to honey, drizzle with pomegranate syrup which is available at gourmet food stores and most Middle Eastern groceries
