Brunch Pizza

Serves 10-12

 

CRUST:

24 oz frozen, shredded hasbrowns

1 egg, beaten

salt and pepper to taste

 

EGG AND CHEDDAR TOPPING:

7 eggs

1/2 cup milk

1 1/2 cups cheddar cheese, shredded

 

OPTIONAL TOPPINGS:

green onions, sliced

green bell pepper, chopped

fresh mushrooms, sliced

chopped ham

Bacon, cooked and crumbled

 

Preheat oven to 400*f.

For crust, combined potatoes and egg in a large bowl.

Spread into a greased pizza pan (14")  Press firmly with the back of a spoon.

Sprinkle with salt and pepper.

Bake 20 minutes.

Meanwhile, preapre egg and cheese topping.

In medium microwavable bowl, whisk eggs and milk.

Microwave, uncovered, on high, 6 minutes.  Stirring halfway through cooking. 

Stir cooked egg, and spread evenly over potato crust. 

Top eggs with optional toppings (listed above)

Sprinkle with cheese, season with salt and pepper if desired.

Bake 10 minutes, or until cheese id melted.

Cut into wedges, and serve hot.
