Crockpot Brunch Casserole
Serves 6

INGREDIENTS:
1 1/2 pounds lean ground beef, ground round or sirloin
1 cup chopped onion
8 ounces mushrooms
2 tablespoons butter
2 cloves garlic, minced
2 teaspoons salt
1/2 tablespoon nutmeg
1/2 tablespoon dried leaf oregano
1 cup frozen spinach, thawed, excess moisture squeezed out
3 tablespoons Flour
6 eggs, beaten
1/4 cup milk, scalded
3/4 cup shredded sharp Cheddar cheese

PREPARATION:
In skillet, lightly brown ground beef and onion in butter;
add onion and mushrooms and sauté for 5 minutes.
Drain off excess fat.
Place meat mixture in generously buttered crockpot.
Stir in remaining garlic, salt, nutmeg, oregano, thawed spinach,
and flour.

Stir until well blended. Beat eggs and milk together.
Pour over ingredients in the crockpot; stir well.
Cover and cook on LOW setting for 7 to 10 hours, or until firm.
Just before serving, sprinkle with the shredded cheese.
